Offline and even background sleep tracking on the pebble directly and then sync with phone after keeping data on pebble until there is a connection with the phone app again. There are other independent sleep apps on pebble so it should be possible maybe with a limited feature set but useful when no phone/battery or if you want to have airplane mode on during sleep.
