I’m trying to use my Fitbit versa as sensor but doesn’t detect it.

On Fitbit App, can’t see what you say.

I’ve seen more info about Fitbit Apps Gallery It seems it doesn’t have any app related to Sleep as Android

Hi, yes, sadly, FitBit has halted support for apps in some regions. Some users were able to pass this absurd limitation with a VPN - would that work for you?
