If the mobile phone was strapped to the chest or upper arm instead of lying on the mattress could the accelerometer detect breathing rate and also the deep sleep intervals ?

Theoretically yes, but as it is now we don’t attempt to detect breathing rate when you use accelerometer, because we assume the phone position to be on the mattress.
