Android wear 2.0 allow apps to respond to accelerometer, so by theory there should be no need to start sleep tracking anymore. It should start itself when it recognize sleep. There only needs an update to the app for that. So sleep tracking should be automatic like on FitBit and Samsung Smartwatches
